Ground crayfish, or crayfish powder, is a seasoning made of dried and ground freshwater shrimps.[1][2] It is not made from actual crayfish.[3][4]
Characteristics
editWhen whole, the shrimps may range in size from small to large.[2] They are usually sun-dried and smoked.[5][4][6] Like other dried and smoked seafood products, they have a very savory flavor and aroma.[5]
Selection and storage
editDried crayfish should be kept in an airtight container away from light, heat, and moisture, where they can last for up to a year.[3]
Use
editGround crayfish is frequently used in various West African cuisines (e.g. Nigerian),[2][5] where it is included in stews, soups, sauces, and more for its savory flavor.[5][7] Gently toasting whole dried crayfish can deepen their flavor.[8]
Substitution
editIf you can't get access to ground crayfish, you can try other preserved seafood products. For example, shrimp paste, bonito flakes, or Maldives fish (cured tuna) may function as a reasonable substitute.[3][7] If you can only find the whole dried shrimp product, you can absolutely shell and grind it yourself.[8]
