  1. Mix spices and tomato sauce and allow to meld flavors while preparing the rest of the recipe.
  2. Beat eggs well.
  3. Heat a small skillet over low heat, sprayed with cooking spray.
  4. Pour beaten eggs into skillet.
  5. Cover skillet.
  6. Cook for 3 minutes. Eggs should be almost set.
  7. Carefully flip omelet over.
  8. Cook another minute.
  9. Combine mushrooms and peppers and cook 30 seconds in microwave oven.
  10. Spread tomato-spice mix over omelet.
  11. Sprinkle cheese over tomato sauce.
  12. Top cheese with hot mushrooms and peppers.
  13. Cover skillet.
  14. Cook another 2 minutes. Cheese should be melted.
