Dijon mustard is a prepared mustard made from husked black or brown mustard seeds, where black seeds are usually considered the strongest and most flavorful. Originally Dijon mustard was blended with verjuice, but today's Dijon mustard is usually blended with wine or vinegar. Additionally salt and other spices are added to lend it a special spicy flavor. True Dijon mustard is actually pale yellow and not brown. It comes in many additional flavored varieties but also ranges from mild in flavor to the very hot.

Historians are not in agreement as to who actually created the original Dijon mustard recipe, but most do tend to agree that the recipe first appeared in Dijon, France; hence the name Dijon mustard.
