- Cook onions in a skillet with oil over high heat until translucent. Add the garlic, and cook until fragrant.
- Add the mushrooms, and cook until they start to brown.
- Add the bell peppers and chilli, and cook for 2 minutes.
- Add the cabbage, and cook for 2 minutes.
- Add the coriander and sweet chilli sauce, and cook for 1 minute.
- Remove from the heat.
- Bring a pan of water to a boil, and add a dash of vinegar.
- Break the egg in a bowl or small container.
- Once water is boiling, swirl the water anti clockwise for about 20 seconds, then place the egg in the middle of the swirl.
- Cook for 2 minutes or more, depending on your preference.
- Serve the poached eggs with the stir-fried vegetables.
