Pounded yam with egusi soup

Pounded yam is a preparation of cooked yam that is pounded until smooth and stretchy. It is a type of Nigerian swallow.


  • Yam, peeled and cut in large pieces



  1. Rinse the yam pieces well.
  2. Place yam pieces in a pot, and cover them with water.
  3. Cover the pot, and cook for about 15 minutes, until the yam is tender.
  4. Remove the pot from the heat, and drain the water from the yams.
  5. Rinse the mortar and pestle.
  6. Place the cooked yam into the mortar. Pound with the pestle until it forms a smooth, stretchy paste.
  7. Serve the pounded yam with your choice of soup.
