Fudge is a type of confection. It is traditionally made by heating a mixture of sugar, butter, and milk to the soft ball stage, before beating the mixture as it cools. This beating encourages the formation of specific crystals that give it a smooth and creamy texture. Sometimes the term "fudge" is used to describe a ganache-like confection made with chocolate and sweetened condensed milk, though this is not technically a true fudge.
