Ingredients
edit- ½ cup (1 stick/125 g/4.4. oz) butter, plus extra for greasing
- 1 cup (225 g/7.9 oz) white sugar
- 1½ cups (125 g/4.4 oz) raisins
- 1¾ cups (250 g/8.8 oz) all-purpose flour
- ½ teaspoon ground cloves
- ½ teaspoon ground allspice
- ½ teaspoon ground cinnamon
- ½ cup (125 g/4.4 oz) ground almonds
- 1 teaspoon baking soda
- 1 tablespoon hot water
- 1 cup (275 g/9.7 oz) unsweetened applesauce
Procedure
edit- Preheat the oven to 180 °C (356 °F). Grease and line two round cake pans.
- Cream butter and sugar in a mixing bowl until light and fluffy.
- Mix in the raisins, flour, spices, almonds and applesauce.
- Dissolve baking soda in hot water and stir into the batter.
- Pour the batter into the prepared cake pans.
- Bake for 45 minutes until golden.
- Transfer the cakes to a wire rack and leave them to cool.
