Common yeast extracts:
- Marmite is a yeast extract, extremely popular in Britain. It has a very strong, rich flavor, tasting slightly like beef stock, with a hint of salt. It is most commonly eaten spread very thinly over buttered toast.
- Vegemite is a yeast extract popular in Australia. It is made from yeast scraped out of beer barrels. This extract has a salty, slightly bittersweet flavor similar to beef bouillon.
- Bovril is not actually yeast extract, but a cow extract; it tastes quite a bit like Marmite and has a lot of the same texture properties. It is enough like the yeasty spread that a good number of websites that have information about either Marmite or Vegemite also make it a point to mention Bovril.
