- Preheat oven to 175°C.
- Peel the plantains and smear them with butter. Place on oven tray.
- Place sausages on oven rack.
- Put tray and rack in oven.
- Bake at 170°C for 30–35 minutes.
- Chop the vegetables, and douse with olive oil and vinegar.
- Serve and sprinkle with black pepper if you so wish.
