  1. Heat the oil in a non-stick pan, and fry the big onion, garlic, red chilli, ginger, and scallion. Stir for about 30 minutes until fragrant.
  2. Add the basmati rice, chilli powder, light soy sauce, fish sauce, chicken powder, salt, and pepper. Cook, stirring, until well-mixed and heated through.
  3. Serve hot.
