Nigerian vegetable couscous is a hearty, healthy dish that can be made with a variety of ingredients. This quick meal can be served as a main course or as a side dish to other dishes.






  1. Simmer the meat and liver in water until tender, seasoning it with onions, spices, and salt. Make sure to cook the meat in enough water to make broth for the couscous.
  2. Remove the meat from the broth, and cool. Cut the liver into small pieces and the beef into medium pieces.
  3. Bring the beef broth to a boil, and pour it over the couscous. Cover the couscous, and let it sit for a few minutes until it has absorbed all of the liquid and softened. Fluff the couscous with a fork.
  4. Heat a thin layer of oil in a pan. Fry the meat and liver pieces until browned, then remove.
  5. Add the garlic and onion to the hot pan, and cook until softened and fragrant. Add the vegetables, and season with thyme, curry, stock cube, pepper, and salt.
  6. Add the beef and liver, and cook for 5 minutes on medium heat. Remove from the heat.
  7. Stir the meat and vegetables into the couscous, gently tossing with a fork to incorporate.
  8. If necessary, reheat the couscous on the stove for 3 minutes.
  9. Serve warm.
