Ji akwukwo is a Nigerian dish made with yam, vegetables, and palm oil. You can use different vegetables according to your preferences.
Ingredients
edit- Yam, peeled and diced
- Onions, chopped
- Scotch bonnet chili pepper, chopped
- Ukpaka, crushed
- Salt
- Palm oil
- Green amaranth leaves, shredded
Procedure
edit- Transfer the diced yam to a pot, and cover with water. Bring to a boil, then simmer until the yam is soft.
- Drain the water from the yams, and return the yam to the pot.
- Add the onion, pepper, and ukpaka to the yam, and stir over medium-high heat.
- Season the yam with salt and palm oil.
- Stir in the shredded amaranth, then cover the pot and allow the mixture to steam.
