This recipe is adapted from the public domain cookbook Mrs. Beeton's Book of Household Management.[1]
Ingredients
edit- 1¼ cups (280 g/9.9 oz) caster sugar
- 2 egg whites
- 2½ cups (170 g/6.0 oz) desiccated coconut
Procedure
edit- Preheat the oven to 150 °C (302 °F).
- Whip the egg whites in a mixing bowl until soft peaks form.
- Add sugar gradually, whipping until stiff peaks form.
- Fold in the coconut until combined.
- Form the dough into pyramids. Cover each pyramid with baking parchment and place them on a baking tray.
- Bake for 15 minutes until they are colored light brown.
- Uncover the biscuits and leave them to cool.
