Cassava salad is a type of salad made with boiled cassava and vegetables. It can be easily prepared at home.

  1. Place cassava in a pot, and add just enough water to cover it. Bring to a boil, then simmer for 20 minutes.
  2. Remove from the heat, then drain the cassava of excess water. Cool the cassava.
  3. Slice the cassava into small pieces, and place it in a large bowl.
  4. Add the red bell pepper, red onion, green onion, celery, lemon juice, salt, cayenne pepper, and mayonnaise.
  5. Toss well to combine. Serve immediately or refrigerate.
