Amchoor, also called amchur or mango powder, is a seasoning powder made from dry unripe (green) mangoes.[1] It is commonly used in Indian and Pakistani cooking.

Characteristics

edit

Amchoor is a beige or brown powder. It has a tangy and sour flavor. Because it is made from unripe mangoes, it is not sweet. The flavor is somewhat delicate, so it's best added near the end of cooking.[1]

Uses

edit

Amchoor is commonly used as a seasoning/flavoring and a tenderizing agent. Because of its acidity, it can be used to add a sour flavor to foods without adding additional moisture.[1] It is widely used in south Asian cooking.
