Paella Valenciana and its seafood variation originated in the early 1800s in Spain's Valencian region near lake Albufera. Valencians consider Valencian paella and seafood paella as authentic. They view all other variations as impostors.

Okra is a fuzzy, green, ribbed, fibrous seed pod. It is best when two to four inches long. When cut open on the bias, it has rows of tiny seeds and a slimy or sticky texture. When okra is boiled, this slimy property becomes pronounced and is typically reduced by adding acidic ingredients. The okra plant is prolific and easy to grow.
