Zimtsterne are German cinnamon cookies often eaten for the advent season.

  1. Beat the egg whites until creamy.
  2. Sift powdered sugar.
  3. Mix egg whites with powdered sugar.
  4. Set aside almost a third of the resulting mass for casting.
  5. Stir in the remaining mass of cinnamon and almonds, or hazelnuts and lemon zest, and knead into a dough.
  6. Roll out the dough, cut out star shapes and place on the greased baking sheet.
  7. Mix the remaining stiff egg white with rum until a glaze mass forms.
  8. Brush the cinnamon stars with glaze.
  9. Bake in a preheated oven at 160°C for about 20 minutes.
