This recipe was found at Restaurant la Cascade[1] in the Languedoc region of France.



  • Peel, chop and fry the onions; do not brown
  • Peel & chop the carrot
  • Mix all except stem ginger together and simmer for forty (40) minutes
  • Finely chop the stem ginger.
  • Liquidize, add 3 teaspoons of finely chopped stem ginger
  • Reheat, check seasoning, and serve.
