Superkanja is a highly nutritious and flavorful stew that brings together an array of leafy greens, including spinach, collards, okra, and sweet potato leaves. This dish has different variations throughout West Africa, such as the Ghanaian kontomire. Recognized as Gambia's super soup, this delectable bowl of goodness can be savored in various countries. Its name originates from the fusion of the Portuguese word for soup (sopa) and a West African term for okra (kanja), which lends the dish its unique texture.






  1. Bring a pot of water to a boil and add the meat and fish. Let them boil for 15 minutes, then remove the fish from the pot.
  2. To the pot, add salt, onions, pepper, and diced okra. Mix all the ingredients well.
  3. Cook the mixture over medium heat for 15 minutes, then incorporate the palm oil.
  4. Reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.
  5. Afterward, return the fish to the pot and continue simmering for 6–10 minutes on low heat.
  6. Serve the superkanja stew with white rice or fufu.
