  1. Place quinoa in a bowl and cover completely with water. Soak for 3–4 hours, then discard the water. Replace with fresh water and soak for another hour or so. Drain again.
  2. Combine the drained quinoa with the 2 cups water and pinch of salt in a pot. Bring to a boil.
  3. Lower the heat, and simmer on the lowest heat setting for 16–18 minutes.
  4. Remove from the heat and let rest for 5 minutes.
