edit- Place quinoa in a bowl and cover completely with water. Soak for 3–4 hours, then discard the water. Replace with fresh water and soak for another hour or so. Drain again.
- Combine the drained quinoa with the 2 cups water and pinch of salt in a pot. Bring to a boil.
- Lower the heat, and simmer on the lowest heat setting for 16–18 minutes.
- Remove from the heat and let rest for 5 minutes.
