Pumpkin purée is a cooked and mashed mixture of a variety of edible pumpkins and, occasionally, other winter squash. Dickinson pumpkins are a common choice for pumpkin purée due to their sweetness and lower water content. Pumpkin purée can be store-bought, often in canned form, where it should not be confused with canned pumpkin pie filling. It can also be homemade by cooking pumpkin and processing it into a smooth paste.
