  1. Preheat oven to 350°F.
  2. Wipe mushrooms clean with a damp cloth, then remove stems and discard. Brush the outsides with olive oil.
  3. Beat eggs with salt and pepper.
  4. Set mushrooms on a cookie sheet and fill each with egg.
  5. Top with Parmesan cheese and bake until eggs are fully cooked (about 10 minutes).
