- Peel the plantain, then slice into long strips.
- Boil and season the fish with curry, thyme, salt, and seasoning cubes to taste.
- Debone the cooked fish and mash it into pieces.
- Combine the flour, sugar, eggs, salt, curry, seasoning cubes, and milk to get a medium-thick batter.
- Roll each plantain strip around some of the mashed fish, and secure with a toothpick.
- Dip each plantain roll in the batter, and deep fry in hot oil until golden all over.
