  1. Peel the plantain, then slice into long strips.
  2. Boil and season the fish with curry, thyme, salt, and seasoning cubes to taste.
  3. Debone the cooked fish and mash it into pieces.
  4. Combine the flour, sugar, eggs, salt, curry, seasoning cubes, and milk to get a medium-thick batter.
  5. Roll each plantain strip around some of the mashed fish, and secure with a toothpick.
  6. Dip each plantain roll in the batter, and deep fry in hot oil until golden all over.
