Plantain mosa are a type of Nigerian fritter made from plantains. It is frequently served as small chops (finger foods) at social gatherings, such as parties and weddings.
Ingredients

- Plantain
- Salt
- Vegetable oil

Procedure
edit- Combine your desired quantity of yeast with the warm water and a small pinch of flour, ensuring there are no lumps. Cover and let sit until foamy.
- Peel the plantain with a knife, and mash it until almost smooth.
- Combine flour and salt in a bowl. Mix well to combine.
- Stir the yeast mixture into the flour mixture. Stir in the mashed plantain with a spatula. Cover with aluminum foil, and keep in a warm place for about 20 minutes until increased in volume.
- Heat enough vegetable oil in a pot for deep-frying, aiming for a temperature of 350–375°F.
- Scoop some of the batter with your fingers, and place it in the heated vegetable oil. Stir and fry until golden brown on all sides.
- Remove the mosa from the oil, and drain away any excess.
- Serve.
