Pesto alla genovese, commonly abbreviated to pesto in English, is an aromatic green condiment made from basil. It is traditionally made using a mortar and pestle to achieve a creamier end result, though it is now often made in a food processor as a shortcut. It is frequently used as a pasta sauce.

Composition

edit

In its most traditional formulation, pesto is made from basil, garlic, parmesan or pecorino cheese, pine nuts, and olive oil. Variations, however, may substitute other leafy greens for the basil and cheaper nuts for the pine nuts.
