Nigerian tomato stew is a dish among all ethnic groups in Nigeria. It is commonly used as a component in a variety of dishes, such as rice and beans.
- Cook the puréed tomatoes and tomato paste in a pot over low heat until most of the water has evaporated.
- Combine the oil, onions, and cooked tomato puree in a mixing bowl. Transfer the mixture to a pot, and fry over low heat until the oil separates out and it no longer tastes like raw tomato.
- Discard the excess vegetable oil on the surface. Stir in the thyme, pepper, and curry powder if using.
- Serve the stew or use in other recipes.
