Nigerian tomato stew is a dish among all ethnic groups in Nigeria. It is commonly used as a component in a variety of dishes, such as rice and beans.

  1. Cook the puréed tomatoes and tomato paste in a pot over low heat until most of the water has evaporated.
  2. Combine the oil, onions, and cooked tomato puree in a mixing bowl. Transfer the mixture to a pot, and fry over low heat until the oil separates out and it no longer tastes like raw tomato.
  3. Discard the excess vegetable oil on the surface. Stir in the thyme, pepper, and curry powder if using.
  4. Serve the stew or use in other recipes.
