  1. Boil the bell peppers, tomatoes, and scotch bonnet peppers for about 5 minutes, or until tender.
  2. Place the peppers in a blender and pulse several times to get a paste.
  3. Blend together the crayfish, onions, and garlic.
  4. Heat a thin layer of oil in a medium-sized pot. Add the garlic-onion mixture, and sauté for about 30 seconds until aromatic.
  5. Mix the tomato paste with a small amount of water, then stir into the onions. Cook until the oil floats to the top.
  6. Add the pepper paste, and cook for 3 minutes. Season the mixture with the stock cubes, curry, and thyme. Add a little more water if necessary.
  7. Stir in the rice and bay leaves. Wrap the pot lid in aluminum foil, and cover the pot. Steam the rice until the water is absorbed and the rice is soft.
  8. Remove the bay leaves, and adjust the seasoning as needed.
