Cookbook:Nigerian Cream Potato Salad
Nigerian cream potato salad is a cold salad made with potato, cabbage, and dressing. It not very common in Nigeria, but it is an alternative salad.
- Boil the potato in salted water for about 15 minutes until tender, depending on the size of the potato. Drain it of excess water, and allow it to cool.
- Peel the potato, and slice it into smaller pieces.
- Combine the potato, chopped eggs, cream, onion, relish, mustard, mayonnaise, cabbage, garlic, salt, and pepper.
- Refrigerate until chilled, and serve.
