Coleslaw is a dish primarily featuring raw, dressed cabbage. Nigerian coleslaw tends to be very simple, typically consisting of shredded cabbage, carrots, and mayonnaise. It is easy to make and requires less time to prepare than other salads. It can be eaten alone or with a variety of rice dishes. It is always enjoyed chilled. Without the mayonnaise, the coleslaw can be kept in the fridge for several days. Once dressed, it should be eaten within a day.
- Carrots, peeled
- Slice cabbage thinly.
- Use a grater to shred the carrot into a bowl. If possible, use a grater or mandoline that will make long, thin pieces.
- Combine the cabbage and carrots. Add mayonnaise, and toss to combine.
- Refrigerate until cold before serving.
