This is an easy and delicious dish popularly cooked in West Africa.
Ingredients
edit- 3 large bunches of sweet potato greens (see notes)
- Vegetable oil
- 2 big onions, neatly chopped
- 2 lbs meat, cut into medium cubes
- Seasoned salt to taste
- Onion powder to taste
- Chicken bouillon cubes, crushed
- Ground red or black pepper to taste
Procedure
edit- Wash the potato greens very well, and remove the leaves from the stems. Chop the leaves into small pieces and set aside.
- Heat a few tablespoons of oil in a large pot. Add the onions and meat, and cook until almost done. Remove from the pot and set aside.
- Add the potato greens, and fry for about 15 minutes or until tender. Stir frequently to prevent burning.
- Add enough water to cover the greens, and season to taste with salt, onion powder, bouillon cubes, and ground pepper.
- Cook over medium heat until all the water is gone, stirring frequently.
- Remove from the heat and serve.
Notes, tips, and variations
edit- Do not eat white potato greens—they are toxic. Sweet potato greens, however, are safe. You can get potato greens from the market or from local farmers.
- If desired, add a pinch of baking soda to the greens when cooking to keep their green color.
