Kuli-kuli is a beloved traditional snack from Northern Nigeria, made primarily from groundnuts. This delightful treat is known for its satisfying crunch and rich flavor, making it a favorite among many.

1. Roast the peanuts on a dry pan over medium heat, stirring occasionally to avoid burning. Once roasted, remove the skins by rubbing them between your hands or using a cloth to gently press and peel off the skins.

2. Grind the Peanuts Grind the roasted peanuts into a smooth paste using a food processor or blender. You may need to add a small amount of water to help blend the peanuts into a paste-like consistency.

3. Prepare the Seasoning Optionally, blend the onion, garlic, and green chilies (if you're using them) into a smooth paste.

4. Mix the Peanut Paste In a large mixing bowl, combine the ground peanut paste with the onion, garlic, chili paste (if used), cayenne pepper, and salt. Mix well to combine all the ingredients.

5. Form the Kuli-Kuli Take small portions of the peanut mixture and roll them into small balls or form them into flat discs, depending on your preference. You can also shape them into small cylinders or oval shapes, like traditional kuli-kuli.

6. Fry the Kuli-Kuli Heat oil in a frying pan over medium heat. Fry the kuli-kuli pieces in batches, ensuring they don’t overcrowd the pan. Fry them until they are golden brown and crispy on all sides (about 4-5 minutes). Be sure to flip them carefully to ensure even frying.

7. Drain and Cool Once fried, remove the kuli-kuli from the oil and place them on a paper towel to drain excess oil. Allow them to cool completely before serving.
