Ingredients

- 1½ cups yellow corn meal
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1¾ teaspoons salt
- 3 eggs, lightly beaten
- ⅛ teaspoon cayenne pepper
- ¼ cup chopped green onions
- 1 cup milk
- ¼ cup vegetable oil
Procedure
edit- Pour oil 3–4 inches (7.5 cm to 10 cm) deep in a pan and preheat to 370°F (~190°C).
- In bowl mix cornmeal, flour, baking powder, baking soda, salt, and cayenne.
- Mix in eggs, green onions, milk, and ¼ cup vegetable oil.
- Spoon 6–7 tablespoons of the batter into preheated oil.
- Fry, stirring constantly for overall browning, until golden brown.
- Remove from heat and drain on paper towels.
Notes, tips, and variations
edit- ⅓ cup minced green onions may be substituted for fresh onions.
- Add 6 oz (170 g) pimento cheese to the batter.
