This recipe is adapted from the public domain cookbook Mrs. Beeton's Book of Household Management.[1]
Ingredients
edit- 3½ cups (475 g/1.05 lb) all-purpose flour
- 2 sticks (250 g/8.8 oz) unsalted butter
- 1 cup (225 g/7.9 oz) caster sugar
- 2 tablespoons ground ginger
- 2 eggs
- Milk as needed
Procedure
edit- Preheat the oven to 160 °C (320 °F). Grease a baking sheet.
- Rub the butter and ginger into the flour in a bowl until the mixture resembles breadcrumbs.
- Add the eggs and mix to a soft dough, adding a little milk if necessary.
- Roll out the dough to 5 mm (0.20 in) and cut out biscuits with a plain round cutter.
- Place them on the prepared baking sheet and bake for 5 minutes until golden.
- Take the biscuits out of the oven and leave them to cool.
