Feijao Tropeiro is a traditional side dish in many parts of Brazil.



  1. Prepare beans according to package, drain and set aside to cool
  2. In large pan cook bacon and sausage.
  3. Remove sausage and bacon.
  4. Slice sausage into 1 inch-thick pieces.
  5. In pan with bacon grease, sauté white onion and garlic.
  6. Slice collard green into small (1/8") strips.
  7. Mix all ingredients except hard boiled eggs in large bowl using a wooden spoon.
  8. Drizzle with olive oil and stir gently.
  9. Garnish with sliced boiled eggs.

May be served hot or cold.
