Ekuru and ata din din

Ekuru is also known as ofuloju, white moin moin, or white bean pudding, is a meal native to the Yoruba people of Nigeria. It is made primarily from white beans, which are puréed and wrapped in leaves before cooking. It is high in protein and fibre.

  • Dried white beans, cleaned
  • Water
  • Salt (optional)
  • Leaves, small nylon bags, cupcake tins or any other mold for steaming

ProcedureEdit

  1. Soak the beans for 10 minutes in cold water to loosen the skins. Remove the skins and discard them. (Note that the time you need to soak the beans properly depends on the type of beans you are using and how dry it is. You may need to soak it for longer. )
  2. Blend the peeled beans to a smooth paste.
  3. Mix the bean paste thoroughly for 20 minutes to incorporate some air. Add water as needed to achieve a consistency that is neither too thick nor too thin.
  4. Season the bean mixture with salt to taste.
  5. Transfer the mixture to leaves shaped into a cone or another mold for cooking. Wrap and seal well.
  6. Bring a pot of water to a boil. Add the wrapped ekuru, cover, and simmer for 45 minutes.
  7. Unwrap/unmold the ekuru, and serve with stew.
