Eel sauce, also called unagi sauce or kabayaki sauce, is a Japanese condiment.

The sauce is dark brown and syrupy, with a deeply salty and savory flavor. The typical base ingredients are soy sauce, mirin, sake, and sugar, which are simmered together until thickened.[1][2]

As the name indicates, eel sauce is primarily used as a glaze and dipping sauce for grilled eel in Japanese cuisine.[1][2] However, it can also be used with other foods, from sushi to various proteins.
