Potato porridge is a dish from the Igbo people of Nigeria.

  1. Rinse the potato pieces, and transfer them to a pot. Cover with water, and bring to a boil. Simmer for 10 minutes until potato is tender. Set aside.
  2. Heat the oil in a pan. Add the sliced pumpkin leaves, onions, peppers, seasoning cubes, and salt.
  3. Stir in the boiled potato. Cook for 5 minutes.
  4. Remove from the heat, and serve.
