  1. Fry onions in olive oil until translucent. Ensure that the onions don't burn.
  2. Add lots of minced garlic. Again, ensure it doesn't burn.
  3. Add a large amount of sugar. Don't caramelise it.
  4. Add tomatoes to onions and garlic, along with additional olive oil.
  5. Simmer for approximately 4 hours to lose as much water as possible.
  6. Add salt, pepper, herbes de Provence, and vinegar.
