The cuisine of Scotland is often neglected and ignored, due to the prevailing view of haggis.

It is true that most dishes rely on well-cooked meat, starches and boiled vegetables. However, these can be thought of as comfort foods, as is the case with the scotch egg, cullen skink or cock-a-leekie soup.

In recent times, an emphasis on international and fusion cuisines has seen a rise of dishes that are often healthier and tastier than traditional recipes.
