- 40 g almonds
- 3 tbsp maple syrup or honey
- ½ tsp salt
- 600 ml water
- ½ tsp vanilla
- 800 ml water
Equipment
edit- Chopping board
- Peeler
- Large pan
- Large knife
- Measuring jug
- Drainer
- Blender
- Cheesecloth or nut-milk bag.
Procedure
edit- Pre-soak your almonds for 1 hour and then drain.
- Peel the potatoes and cut into 5 cm chunks. Place your chunks into your pan with water covering their tops.
- Bring your hob to a high heat, cooking for around 15 minutes until tender.
- Drain your potatoes. Place them into your blender with the almonds, vanilla, and salt. Add the water. Blend until smooth on a high speed.
- Placing your cheesecloth into a bowl, place your mixture into it and use a fork to agitate if needed.
- When strained, taste your strained mixture. Add more water, vanilla, salt, or maple syrup/ honey as needed - depending on your tastes.
- Chill and serve, shaking your mixture beforehand.
Notes, tips, and variations
edit- You can reuse any leftover potato mixture in other dishes, like potato scones or mashed potato.
- A fine metal strainer can be used in place of the cheesecloth, although it's not as effective.
