An immersion chiller is one of the two wort chillers commonly used by homebrewers. The immersion chiller consists of a coil of copper tubing that is put in the brew pot at the end of the boil. It is put in before the end of the boil as these temperatures sanitize the coils. Cold water is run through the wort chiller. This method is slower than the other type of wort chiller, the counterflow, but has several advantages. These include: hot break is kept in the brew pot and can be separated, reducing trub in fermenter, the apparatus is easily sanitized, and it is generally less expensive and easier to make than a counterflow wort chiller.
