Description
English: Ripe fruit of the tree Dacryodes edulis, called nsafu (Kongo), safoutier (Fr.) African pear or bush plum (Eng.).Also known as butterfruit. Despite English name, not at all 'pear' or 'plum'-like. Darker outer skin color has blue tones, lighter is violet. Inside is a large pale kernel surrounded by a layer of green edible pulp. Preferred preparation is bring a pot of water to a boil, remove from heat and add the whole fruit to blanch, turning the floating fruit occasionally for a few minutes to soften the pulp and skin. Remove from hot water and eat while warm, the softened edible skin and pulp slide off the large kernel easily, discard the kernel (the kernel does have other uses). Can also be roasted. A mild, slightly tangy almost avocado-type flavor after the blanching step. Can be added whole to popular sauces at the end of cooking. Usually no more than one or two at any given meal or snack are eaten as this fruit (nsafu) has a reputation of causing drowsiness. Size: length 6.5 - 8 cm. Grows in and is an important seasonal fruit crop in the African rainy equatorial climatic zone from West to Central to East Africa.
