Zereshk Palau is an Iranian rice dish cooked with barberries.



  1. Soak barberries in water for 20-30 minutes.
  2. Chop onion and saute in oil.
  3. Strain barberries to remove any stones.
  4. Combine barberries with onion and cook on low heat.
  5. Cook chicken on top of rice in a rice cooker.
  6. When rice is done, fluff and put in a large bowl.
  7. Grind saffron with mortar and pestle.
  8. Add a teaspoon of water to ground saffron.
  9. Add some rice to the saffron water and stir.
  10. Return yellow rice to the main dish and add the onion and zereshk mixture.
  11. Fluff ingredients to mix well.
  12. Serve with Lavash or barbari bread.
