This recipe was found in Githima, a small town outside the city of Nakuru in Kenya. If you ask for fried eggs in the West of Kenya, you'll probably have the eggs scribbled.
To scribble eggs, you first mix two eggs together and pour into a frying pan. Instead of leaving it like with an omelette, or whisking it to scramble; you stir the eggs, which these Kenyan's call scribbling.
Fry chopped tomatoes for a minute, then add sliced spring onion, and allow to simmer for another minute before pouring in the egg mixture and stirring.
