Saj bread (Arabic: خبز الصاج) is a thin, unleavened flatbread baked on a griddle known as a saj.

- Mix flour and water, adding water gradually, until left with a workable dough. Knead thoroughly.
- Cover the dough and let rest for about 5 minutes. Add salt.
- Separate from dough smaller portions and make into balls. Using a flat surface lined with flour, begin to roll-out each ball into a flat piece of dough.
- Place flattened dough on griddle and bake until tender. On a heated griddle, baking only takes a few seconds. Flip-over and bake the other side for only a few seconds.
- Remove from griddle and allow to cool. Fold and store.

- Mix ingredients and knead thoroughly.
- Cover the dough and let rest for about 30 minutes.
- Once again knead the dough, and divide into smaller portions. Roll out each portion over a flat surface with a rolling pin. Surface should be sprinkled with flour to prevent sticking.
- Take up rolled-out dough with a wooden rod and apply it to heated griddle. Turn over and bake on reverse side.
- Remove and let cool. Fold and store.
NOTE: In some places, milk is added to flour instead of water.
