This recipe for eggs and potatoes makes a light breakfast or other simple meal.

  1. Heat a thin layer of oil in a hot pan. Add the diced potatoes, and stir for 2 minutes.
  2. Add onion and garlic powder, and stir for 2 minutes.
  3. Add the tomatoes and peppers. Cover the pan and cook for 3 minutes, stirring occasionally.
  4. Stir in the stock cube, thyme, curry powder, and salt.
  5. Crack the eggs directly on top of the potato mixture. Gently shake the pan to move the eggs to all sides, but do not stir.
  6. Cover the pan, and cook until the eggs are set and no longer runny.
  7. Remove from the heat, and serve with sliced green bell peppers.
