Nigerian assorted cow tail pepper soup is a type of Nigerian pepper soup made with cow liver, muscle, feet, and heart. It is usually eaten in eastern Nigeria, where it can be found in most eateries and restaurants.

- Assorted cow parts (heart, liver, meat, foot), washed
- Salt
- Curry powder
- Thyme
- Onion, sliced into rings
- Stock cube
- Chile pepper, ground
- Ground crayfish
- Pepper soup spice
- Uziza leaves

- Combine the cow foot, salt, curry powder, and thyme. Add enough water to cover the meat. Cover the pot, and simmer for 35 minutes.
- Stir in the cow heart, and cook for 15 minutes.
- Stir in the meat and liver, adding more water as necessary to cover the meat.
- Stir in the onion and stock cube, and simmer for 15 minutes.
- Stir in the ground pepper, ground crayfish, pepper soup spice, and uziza leaves. Mix well, and simmer for 10 minutes until all the meat is soft and tender.
- Remove from the heat, and serve.
