Alkaki is a Nigerian snack predominantly consumed in traditional marriages and royal families in the north of the country.

  1. Add groundnut oil, water, and milk to the flour, and rub with your hands. Stir until it is thoroughly mixed.
  2. Knead in water to make a dough.
  3. Cover dough and let rest overnight in a warm environment.
  4. Pound dough in a mortar, adding water until it is sticky and soft.
  5. Roll dough in a groundnut oil and fold to form the shape of choice.
  6. Heat groundnut oil in a frying pan, and add the dough. Fry, turning every so often, until golden brown all over.
  7. Remove fritters from the oil, and drain any excess oil.
  8. Boil water, and stir in the sugar to make a syrup.
  9. Soak the fried dough on the sugar syrup for a few hours.

  • The milk gives a sour taste to the dough, which is balanced by the sugar syrup.
