Chapter 4 covers the function of lipids in food and in the body, and how the different classes of lipids influence health. In this chapter you will learn about the importance of essential fatty acids, particularly omega-3 fatty acids and how dietary intake can modulate health outcomes. The lipoproteins HDL and LDL are defined not a simply “good and bad cholesterol” but as cholesterol carriers. More so than other macronutrients the concept that “We are what we eat” will ring true for the contrast between dietary and body lipids.
