Zobo is a Nigerian beverage made from roselle (Jamaican sorrel) leaves. It is very sour, so sugar can be added to taste.

- Place roselle leaves in a pot, and cover with water. Bring to a boil.
- Add ginger and additional water as necessary. Boil until the sorrel leaves are soft.
- Turn off the heat, and set aside to cool down completely. Remove and discard the leaves.
- Blend the pineapples. Combine the pineapple juice and roselle liquid.
- Add any additional ingredients as desired, such as citrus juice or spices. Sweeten with sugar if desired.
- Pour into bottles and refrigerate. Serve cold.
