Zobo is a Nigerian beverage made from roselle (Jamaican sorrel) leaves. It is very sour, so sugar can be added to taste.

  1. Place roselle leaves in a pot, and cover with water. Bring to a boil.
  2. Add ginger and additional water as necessary. Boil until the sorrel leaves are soft.
  3. Turn off the heat, and set aside to cool down completely. Remove and discard the leaves.
  4. Blend the pineapples. Combine the pineapple juice and roselle liquid.
  5. Add any additional ingredients as desired, such as citrus juice or spices. Sweeten with sugar if desired.
  6. Pour into bottles and refrigerate. Serve cold.
